Cucumber and Shrimp Soup

Makes 4 servings     Preparation Time: 10 minutes     Refrigeration Time: 1 hour

6 small cucumbers, diced
6 ripe peaches, peeled and diced
1 shallot, finely chopped
1/4 tsp salt
1/2 tsp ground pepper
1 cup(250ml) peach nectar
2 Tbsp. chopped chives
1/2 lb(235g) nordic shrimp
ice cubes

1.In a food processor, mix 5 cucumbers, 4 peaaches and shallot for 1 min. Add salt, pepper and peach nectar. Mix until smooth.
2.Pass mixture through a sieve over a large bowl. Refrigerate 1 hour. Freeze 15 min.
3.In a bowl, mix remaining cucumber and peach with chives. Add to cold soup.
4.Pour soup into individual bowls; garnish with shrimp and serve immediately.
