Tropical Cheesecake

Yield: 6 servings     Preparation Time: 45 min     Baking Time: 55 min     Refrigeration Time: 6 hours

1 cup (85 g) Graham cookies, crumbled
½ cup (45 g) coconut, finely grated
¼ cup (60 ml) melted butter
8 oz (225 g) cream cheese
¼ cup (60 ml) coconut milk
¾ cups (150 g) sugar
3 eggs
1 cup (250 ml) sweetened condensed milk
2 egg yolks
½ cup (125 ml) passion fruit purée
1 pinch of salt
½ papaya, peeled and diced
1 mango, peeled and diced
1 banana, peeled and diced
½ cup (125 ml) passion fruit syrup

1.Preheat oven to 350°F (180°C).
2.In a food processor, mix Graham cookies, coconut and melted butter to combine. Spread and press preparation on bottom and sides of a spring form pan. Bake 10 minutes. Remove from oven and let cool.
3.In a bowl, using an electrical whisk, beat cream cheese, coconut milk, sugar and 2 eggs. Pour in prepared crust (pan will be filled halfway). Bake 20 minutes. Remove from oven and let cool completely at room temperature.
4.In a bowl, whisk condensed milk, 1 egg, egg yolks, passion fruit purée and a pinch of salt. Delicately pour over cake. Bake 25 minutes or until cake is set but center slightly wobbly.
5.Remove from oven and let cool completely. Refrigerate 4 hours.
6.In a bowl, mix diced papaya, mango and banana with passion fruit syrup. Pour over cold cake and refrigerate 2 hours before serving.
